ground turkey

red bell pepper
sliced
1
yellow bell pepper
sliced

cups
fresh spinach
1
tablespoon
olive oil or avocado oil
1
tablespoon
fresh ginger
grated (or 1 teaspoon ground ginger)
2
–3 tablespoons coconut aminos
1
clove
garlic
minced (optional)
Optional: sesame seeds for garnish
Instructions
Heat oil in a large skillet over medium heat.
Add ground turkey and cook until browned, breaking into small pieces.
Add ginger and garlic. Stir for 30 seconds until fragrant.
Add bell peppers and cook 3–4 minutes until just tender.
Stir in spinach and coconut aminos.
Cook until spinach wilts and everything is well combined.
Taste and adjust seasoning if needed.
Notes
Serve on its own for a low-carb option or over cauliflower rice or jasmine rice for additional energy support.
