Turkey & Vegetable Stir Fry

Ingredients

  • 1 lb ground turkey
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil or avocado oil
  • 1 tablespoon fresh ginger grated (or 1 teaspoon ground ginger)
  • 2 –3 tablespoons coconut aminos
  • 1 clove garlic minced (optional)
  • Optional: sesame seeds for garnish

Instructions

  • Heat oil in a large skillet over medium heat.
  • Add ground turkey and cook until browned, breaking into small pieces.
  • Add ginger and garlic. Stir for 30 seconds until fragrant.
  • Add bell peppers and cook 3–4 minutes until just tender.
  • Stir in spinach and coconut aminos.
  • Cook until spinach wilts and everything is well combined.
  • Taste and adjust seasoning if needed.

Notes

Serve on its own for a low-carb option or over cauliflower rice or jasmine rice for additional energy support.
