Veggie Egg Scramble with Avocado

Ingredients

  • 2 eggs
  • 1 cup spinach or mixed vegetables
  • 1 teaspoon olive oil
  • 1/4 avocado
  • Salt and pepper

Instructions

  • Heat olive oil in a pan. Sauté vegetables until soft. Add eggs and scramble gently. Top with avocado.
