Beet & Pumpkin Seed Power Bowl with Lemon Tahini

cubed (roasted or steamed)

baby greens or arugula

cooked quinoa or cauliflower rice

Lemon Tahini Dressing

tablespoons
tahini
2
tablespoons
lemon juice

tablespoon
olive oil

teaspoon
honey

–2 tablespoons warm water
to thin
Pinch
sea salt
Instructions
Arrange greens in a bowl and top with beets, quinoa or cauliflower rice, pumpkin seeds, and feta if using.
Whisk all dressing ingredients until smooth and pourable.
Drizzle dressing over bowl just before serving.
Notes
Add grilled salmon or chicken for extra protein.
Use precooked packaged beets or beets can be roasted ahead for quick assembly meals.
