Beet & Pumpkin Seed Power Bowl with Lemon Tahini

Ingredients
- 2 cups cooked beets cubed (roasted or steamed)
- 3 cups baby greens or arugula
- ½ cup cooked quinoa or cauliflower rice
- ¼ cup pumpkin seeds
- ¼ cup crumbled feta optional
Lemon Tahini Dressing
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1 –2 tablespoons warm water to thin
- Pinch sea salt
Instructions
- Arrange greens in a bowl and top with beets, quinoa or cauliflower rice, pumpkin seeds, and feta if using.
- Whisk all dressing ingredients until smooth and pourable.
- Drizzle dressing over bowl just before serving.
Notes
Add grilled salmon or chicken for extra protein.
Use precooked packaged beets or beets can be roasted ahead for quick assembly meals.
