Turkey & Sweet Potato Stir-Fry

A fast, one-pan dinner with protein, colorful vegetables, and anti-inflammatory ingredients.

Ingredients

  • 4 oz lean ground turkey
  • 1/2 cup sweet potato diced small
  • 1 cup broccoli florets
  • 1/4 red bell pepper sliced
  • 1 tsp avocado oil
  • 1 tbsp coconut aminos or tamari
  • 1/2 tsp grated ginger
  • 1 garlic clove minced
  • Sesame seeds and green onion for garnish

Instructions

  • Heat oil in a skillet over medium heat.
  • Cook sweet potato 5–6 minutes until beginning to soften.
  • Add turkey and cook through.
  • Add broccoli, bell pepper, garlic, and ginger.
  • Stir in coconut aminos.
  • Cook until vegetables are tender-crisp.
  • Top with sesame seeds and green onion.
