Beet & Pumpkin Seed Power Bowl with Lemon Tahini

Ingredients

  • 2 cups cooked beets cubed (roasted or steamed)
  • 3 cups baby greens or arugula
  • ½ cup cooked quinoa or cauliflower rice
  • ¼ cup pumpkin seeds
  • ¼ cup crumbled feta optional

Lemon Tahini Dressing

  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1 –2 tablespoons warm water to thin
  • Pinch sea salt

Instructions

  • Arrange greens in a bowl and top with beets, quinoa or cauliflower rice, pumpkin seeds, and feta if using.
  • Whisk all dressing ingredients until smooth and pourable.
  • Drizzle dressing over bowl just before serving.

Notes

Add grilled salmon or chicken for extra protein.
Use precooked packaged beets or beets can be roasted ahead for quick assembly meals.
