Ingredients
- 1 cup cooked rice or quinoa
- 3 –4 oz cooked protein chicken, salmon, tofu, or tempeh
- 1 cup roasted or sautéed vegetables broccoli, carrots, zucchini, etc.
- 1 –2 tablespoons sauerkraut or kimchi
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Add rice or quinoa to a bowl as the base.
- Top with cooked protein and vegetables.
- Add 1–2 tablespoons of sauerkraut or kimchi.
- Drizzle with olive oil and season as desired.
- Serve warm.
