Ingredients
- 4 oz grilled chicken breast sliced
- 1/2 cup cooked quinoa
- 1/4 cup roasted chickpeas
- 1/4 cucumber diced
- 2 tbsp red onion chopped
- 1 tbsp crumbled feta
- 1 tbsp olive oil
- Juice of 1/2 lemon
- 1 tsp dried oregano
- Salt and pepper
Instructions
- Cook quinoa according to package instructions.
- Season chicken with salt, pepper, and oregano. Grill or pan-sear until fully cooked.
- Assemble quinoa, chicken, chickpeas, cucumber, onion, and feta in a bowl.
- Drizzle with olive oil and lemon juice.
- Serve warm or chilled.
