Lemon Herb Chicken & Quinoa Power Bowl

Ingredients

  • 4 oz grilled chicken breast sliced
  • 1/2 cup cooked quinoa
  • 1/4 cup roasted chickpeas
  • 1/4 cucumber diced
  • 2 tbsp red onion chopped
  • 1 tbsp crumbled feta
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • 1 tsp dried oregano
  • Salt and pepper

Instructions

  • Cook quinoa according to package instructions.
  • Season chicken with salt, pepper, and oregano. Grill or pan-sear until fully cooked.
  • Assemble quinoa, chicken, chickpeas, cucumber, onion, and feta in a bowl.
  • Drizzle with olive oil and lemon juice.
  • Serve warm or chilled.
